How to Make Tuver Lilva Kachori

Recipe by Naiya Sheth: In earlier recipe we made different dry kachories like Khasta kachori, pyaz kachori, paneer kachori, raj kachori and crispy khasta kachori. But now it's time for very famous and yummy, delicious Gujarati farsan - Tuver Lilva Kachori. This is very popular gujarati seasonal recipe made from fresh tuver - pigeon peas. So you can say this as stuffed pigeon peas balls. The main ingredient of this recipe tuver lilva is widely available during winter. And it is served with imli chutney and green chutney. So, try this home made Gujarati recipe today.



Preparation time - 20 minutes
Cooking time - 8 to 10 minutes
Serves - 2 persons 

Ingredients to make Tuver Lilva Kachori:

For outer layer:

1 cup refined flour
2 table spoon sooji - semolina
2 table spoon ghee - clarified butter
1 table spoon oil
Salt to taste


For stuffing: 

2 cups tuver lilva pigeon peas
1 table spoon oil
1 tea spoon cumin seeds
1 table spoon sesame
1 table spoon green chillies finely chopped
1 tea spoon crushed ginger
1 tea spoon crushed garlic (opt.)
1/4 tea spoon turmeric powder
A pinch garam masalo
Salt to taste
A pinch soda bi carb
1 tea spoon lemon juice
1 to 2 table spoon sugar
2 to 3 table spoon chopped coriander
Rice flour for dusting

Method to make tuver lilva Kachori:

For outer layer:

  • Mix all ingredients in a big bowl.
  • Knead semi soft dough with the help of water.

For stuffing:

  • Heat oil and add cumin seeds. When they crackles add green chillies, garlic paste and sesame seeds.
  • Add soda and 1/8 cup water to it.
  • In a microwave safe bowl add crushed pigeon peas. (I did it in chopper.)
  • Add above oil mixture to it. Mix well.
  • Cook in microwave for 3 to 4 minutes covered. 
  • (Cooking time may be differ brand to brand.)
  • Mix well. If cooked add other spices and cook for 2 to 3 minutes uncovered.
  • Add coriander and mix well.
  • Let it cool at room temp.
  • When cool make equal balls from it.

How to assemble:

  • Knead dough again and make small balls from it. Roll small puries from it.
  • Now place a stuffing ball at the centre of it and make kachori from it as shown in pic.
  • Remove excess portion carefully.
  • Repeat the same for remaining.
  • Heat oil and fry kachories at slow flame till golden brown.
  • When ready serve hot Tuver Lilva Kachori with sweet and green chutney.

Tips:

  • Cooking time may be differ brand to brand.
  • Whole cooking process can be done on flame also. But in that case stir occasionally. It may take more time in cooking.
